It is soup time! Yes, that time of year when nothing but a hearty soup will warm you up. With everyone’s busy schedule, it is hard to remember to put the soup on to slow cook all day. So I have developed some fast and easy hot soup for cold night recipes. These are “man tested” and ones that my family and friends still asked for year after year.
Chicken Tortilla Soup
First off, my Chicken Tortilla Soup! You can grab all the ingredients needed to make this soup on your way home from work and have it ready to eat in about 45 minutes. I serve this soup with tortilla scoop style chips, Mexican cheese, and sliced avocado.
Quick And Easy Beefy Veggie Soup
Next is my Beefy Veggie Soup and this one is a “man pleaser”. The key to this soup is to use the Hormel Roast with Au Jus. All the flavoring for the roast is already contained in the package. It takes 4 minutes to heat the roast in the microwave and you are ready to go. With the addition of the can of French Onion Soup, this Beefy Veggie Soup has a rich and hearty broth. Serve with Saltine cracker, hot cornbread, or my favorite cheese toast.
Chicken Noodle Soup
Everyone needs a Chicken Noodle Soup in their soup arsenal. This one is perfect for those days when you are feeling a little poorly and need a hot but hardy soup to chase away the winter colds. All the flavoring comes from the box of chicken stock but I have been known to throw in a couple of extra chicken bullion or some chicken bone broth. Use any noodles you like and serve this soup with Saltine crackers.
Lemon Chicken Orzo Soup
A lighter more brothy soup, The Lemon Chicken Orzo Soup is easy and a great alternative to a heavier soup. The flavoring comes from the rosemary, lemon juice, and greek seasonings. This recipe is a copycat from the soup served at the Taziki’s restaurants and goes perfectly with a spinach side salad for a healthy lunch.
With the shorter and colder days, the last thing you want to do is chase dinner. I try to keep the ingredients for these soups on hand so I can quickly make dinner (leftovers for lunch) without having to get out into the craziness of the holiday seasons to fetch supper. Also, it is a great way to get my son and his wife to come and visit. I just tell them “soup is on” and have takeaway containers ready to give them a hearty lunch the next day.
